Lentil Bulgur Salad

Gorgeous, Delicious and Addictive!

Sprouts to Use
Peasant Mix
Any Lentils

Ingredients


1 cucumber - peeled and chopped
1 cup bulgur wheat
2 Tbs. capers
1 - 2 cups Lentil sprouts
2 scallions - sliced thin
2 medium tomatoes - chopped
1 cup flat-leaf parsley - leaves only

5 Tbs. olive oil
3 - 4 Tbs. lemon juice
1 tsp. salt
1 tsp. black pepper

bibb lettuce (optional)

Preparation

In medium saucepan, bring 3 cups water to a boil over high heat. Stir in bulgur. Reduce heat to low, cover and simmer until tender, about 15 minutes. Drain in fine-meshed sieve and let cool to room temperature, about 15 minutes.

In large bowl, combine cooled bulgur, sprouts, capers and vegetables and toss well.
Mix oil, lemon juice, salt and pepper. Pour over that pretty stuff in the bowl and toss until well blended.

Serve

Serve in a beautiful bowl or over lettuce leaves.

Notes

Sun-dried tomatoes are a great sub for the fresh ones!

We are many years older than when we started and our days are too short and made up of too few hours to do everything. This limitation in our business has not kept us from pleasing our customers, nor from growing (as we have every year since 1993). We do what we do as well as we can, and we think we do it very well indeed.
